What plugs did you buy? And did you double check your plug boots to make sure they are connected solidly?

What would happen if the gap was a little bit widder than normal?
You wouldn't get as good a of combustion burn as normal. You'd be running a bit rich due to that fact. It might not be anything you'd feel with your ass-ometer...

One thing about the shudder from my experience, it is violent. If you had any sign of it, you'd notice. It is also only happens when taking off from a stop, not when already cruising then accelerating. It'll feel like the bikes wants to run away from you.

This bike normally has a pounding type of vibration that happens a WFO acceleration. It gets worse with age as the rubber engine mounts and driveline cushons harden. And if you do mods that add power it makes it more noticable too. Clutch shudder is something like when someone is learning to drive a stick shift car and it lerches and stalls, except the clutch is doing it by itself.
