Can I use any part of the rear stock peg to adapt to my Kuri pegs to make them work without buying the adapter?

NO, the spring and ball are the only 2 pieces that are reused with the adapters. I tried Goldwing Kuryakyn pegs on mine because they looked similar , but it did not work.

It would be more trouble than it's worth. The stock peg mount is part of the peg and the Kury adapters attach to the pegs with a long bolt that goes all the way through them. You would need to cut off the stock peg bracket, drill and tap it for the bolt the Kury peg uses, and hope it holds. The Kury adapters are splined and go back inside the pegs to support them and keep them from rotating.
