I have had a few instances where, when downshifting, that the clutch chatters. Sometimes enough to break the rear tire loose. Ideas?

Lots of engine braking means you can't just drop the clutch when downshifting. You have to rev match to do it smoothly.
Until someone comes out with a slipper clutch, which isn't likely to happen, that's all you can do.
